Don’t You just Love Kale Salad?

kale saladDon’t you just love kale? It’s one of the most healthiest food of all. It low calorie but packed with nutrients. Eating more kale is a great way to dramatically increase the total nutrient content of your diet.

One of the things I sometimes find with kale is that it can be a bit bitter. Here is a raw kale salad that I think you will love.

[tweetthis]One of the keys to reducing the bitterness of kale is to massage it and break down the rigid plant cell structure.[/tweetthis] This will also help it digest better. If your kale has thick stems, remember to remove them before adding it to the salad.

This is a quick and easy recipe that will serve 4-6. I love grilled wild caught salmon or some other fish served with roasted red potatoes and this kale salad. Enjoy!

Ingredients

1 head of kale, stems removed

olive oil

juice of 1 lemon

1 tbs. apple cider vinegar

1/4 cup raw pumpkin seeds

1/2 red onion, sliced thinly

1 diced avocado

salt and pepper to taste

Preparation

Chop the kale leaves into bite size pieces and add a few tablespoons of olive oil. This will vary depending on the amount of kale. Just use your best judgement.  Remember to give them a gentle massage for about 5 minutes or until the leaves turn a bit darker. Add all the ingredients except the avocado and toss. Sprinkle the avocado chunks on top and serve. Voila!

The great thing about this salad is it will continue to marinate in the fridge for a few days and will become easier to digest. So you can even make this the day before a picnic or party. If you do that, I would suggest adding the avocado just before serving and brown chunks of avocado are less than appetizing. Let me know what you think.
