It’s that time of the year where holiday weight gain is a common concern. Did you notice that holiday seem to roll faster every year? And it still is despite the pandemic. If you’re anything like me, you’re starting to do some holiday shopping as well as recommitting to eating and drinking less!
The thing is, I’m a good cook and I love food. As a result, I have a fridge stuffed with all sorts of yummy leftovers from Thanksgiving. Although the food was all really healthy, I did over indulge a bit. I do love Almond nog!
One of the things I love doing is taking leftovers and turning them into something new. On Sunday, I sautéed the leftover Brussel sprouts, whipped some eggs with milk, pour that over the sprouts, topped with fresh parsley and some shredded cheese. I cooked it in a cast iron skillet and when it was almost done, I popped it into the broiler until the cheese was a bit browned. Ta-da! Frittata!
Another Sunday brunch hit: I also scooped up some leftover mashed potatoes, made patties and coated them in almond flour. Then I cooked them in the skillet until brown using some ghee.
