Stuffed Peppers and Chocolate “Cheese” Cake

Here is the next 2 weeks of menu plan 4-8. The next 2 weeks includes a road trip to the Grand Canyon for Spring Break. We’ll be “glamping” it up RV style, so I had to plan my meals accordingly. I’ve got a small fridge and a stove top burner. Wish me luck.

I made this lovely stuffed peppers on Saturday night. Super simple and yummy enough to share with friends. I love that it is essential a one dish meal as the peppers are stuffed with lots of veggies, rice and shredded tempeh (or chicken). I served with a simple salad of mixed greens with a drizzle of olive oil and fig vinegar. We finished it with a chocolate “cheese” cake that was sweetened with prunes and maple syrup and contained no cheese. If you want the recipe, email me and I’ll be happy to share.

For those of you who are following this week’s menu, here are a couple of pictures. First is the polenta crust pizza. It’s topped with edamame and shredded Brussels spouts. It turned out amazingly. Then, here is a shot of the chocolate “cheese” cake that really isn’t a cake and has no dairy, soy, or gluten. So yummy!
