Tangy Lettuce Soup Recipe

Tangy Lettuce Soup Recipe1 onion, chopped
olive oil
3 garlic cloves, chopped
2 medium potatoes, any variety you like, peeled and chopped
1 head of Romaine lettuce, washed and chopped
5 cups of veggie or chicken broth
salt and pepper to taste
sprinkle of dried basil
sprinkle of balsamic vinegar or umeboshi plum vinegar

1. In a soup pot, sauté onions, then add garlic.
2. Add the broth and potatoes. Cook on medium until the potatoes are tender.
3. Once they are tender, add the lettuce leaves and cook for another 5 minutes. Add the basil, salt, and pepper. You can spice it up with a bit of cayenne if you like.
4. Drizzle vinegar on top and then use immersion blender to get everything to even consistency.
5. Serve with a bit of crème fresh or sour cream, if you’d like.
