I found this recipe in a Paleo cook book. I made some changes and they turned out delicious! They were super simple to make. Keep them stored in the fridge as they tend to melt.
Preheat oven to 325 degrees. Line an 8×8 pan with parchment paper and spray with coconut oil.
Heat in saucepan over low heat:
1/4 cup coconut oil
1/4 cup real maple syrup
1/4 unsweetened almond, peanut, or sunflower seed butter
Set aside to cool for about 15 minutes.
In a medium bowl, mix:
1/3 cup raw pumpkin seeds
1/2 cup roasted, salted sunflower seeds
1/3 cup roasted, salted almond slivers or cashews or peanuts
1/4 cup chopped dark chocolate
1/3 cup currants
2 scoops of USANA Nutrimeal Free protein powder
Pour the melted ingredients into dry and mix well. Spoon mixture into lined pan and cook for 25-30 minutes until bubbly and golden. Remove from oven and let cool for 15-30 minutes. Cut into bars but leave in the pan and put in the fridge to completely cool. Once they are firm, place in airtight container and store for a week in the fridge. If you’re anything like me, they were eaten in less than a week. So yummy!
