> And I like to eat healthy foods. So what do I do when I get a chocolate craving? I usually eat a couple of bites of a USANA chocolate fusion bar because it’s got good ingredients. The other day though, I was looking around at other healthy cooking sites and found this recipe from Rose Cole. I gave it a try and boy is it yummy. It’s got a lot of coconut flavor along with the chocolate which I thought worked quite well. Enjoy!
Ingredients:
1 cup coconut oil
1/4 cup raw organic almond butter
1/4 cup almond meal
4 Tbsp agave nectar
1/4 cup organic unsweetened coconut
1/2 tsp liquid stevia or 3 tsp powdered Stevia
1 Tbsp organic vanilla
1 tsp cinnamon
3/4 cup raw chocolate cocoa powder
Melt coconut oil in a saucepan over low flame. When it turns to liquid pour into glass bowl.
Slowly whisk in almond butter, cinnamon, Stevia, and agave, one at a time.
Next, whisk in vanilla.
Then slowly stir in cocoa, almond meal, and coconut, one at a time.
Batter should run off a spoon. Spoon them into bite sized amounts on a non-stick cookie sheet and freeze for 15 minutes. Once firm, transfer into a container and keep in the fridge.
