Nut Butter (cookies)

nutsThis recipe can be made as nut butter or dehydrated to make cookies. It’s so incredibly yummy the batch I made disappeared in in no time.

2 cups almonds
2 cups pecans or any other nut or seeds other than peanuts
6 tlbs coconut oil
2 scoops protein powder, I used USANA nutrimeal Free
9 dates
Raw cacao, optional

Preparation:
1. Soak nuts overnight
2. Discard water, if you are making nut butter and want a longer shelf life then dehydrate the nuts prior to making the nut butter
3. Put nuts into food processor until finely ground
4. Add coconut oil, 2 tablespoons at a time until you begin to get a smooth, buttery consistency
5. Add protein powder
6. Add dates, one at a time.

To make cookies:
Roll nut butter into small balls and roll in cacao powder. Then flatten and dehydrate until desired consistency.
