Paleo Fish Sticks

This is my new favorite cook book. Paleo Indulgences. I got it from Amazon, like everything else in life.

 

Coating

1/2 raw macadamia nuts, I used almonds because that’s what I had on hand and it worked well

1/2 cup unsweetened finely shredded coconut

1/4 tsp freshly ground black pepper

1/8 tsp turmeric

1/2 tsp granulated onion

1/2 tsp paprika

1/4 tsp sea salt

 

Fish

1-2 lbs. firm white fish or chicken cut into small strips

coconut oil for pan

 

1. place nuts in food processor and pulse into fine meal.

2. Place nut meal and remaining coating ingredients in a shallow dish and mix to combine.

3. Rinse the fish with cold water and leave damp but not soaked.

4. Toss each fish strip in coating.

5. Heat the oil in skillet. Melt enough coconut oil to cover the bottom and come partway up the sides of the fish. You don’t want to deep fry it, just enough oil to cook it evenly.

6. Brown the fish and flip, about 3 minutes per side. Turn fish only once.

7. Place the cooked fish on a wire rack over a baking sheet while the remaining fish cooks. Serve and Enjoy!
